school has been wonderful and my new class is full of sweet little ones. they bring me picked flowers, fresh tomatoes and zucchinis, and herbs from their gardens every morning. i am very happy with our move.
so because of our recent abundance of lovely green veggies i need to share my most recent treats.
zucchini fritters
1 large grated zucchini
1 small chopped onion
1 clove garlic
3 eggs, beaten..
1/2 cup parmesan cheese
1 tbsp. chopped parsley
1 cup milk
2 cups plain flour
salt
pepper
olive oil
1. mix up all ingredients, salt and pepper to flavour (except olive oil)
2. heat a frying pan and add a drizzle of olive oil
3. spoon in some of the mixture and let golden then flip
simple perfection, savoury pancakes.
serve with a dollop of sour cream and drizzle of sweet chili sauce and they are divine.
The rest of the week-end includes:
~gardening
~swimming in the river with my wonder mutt
~school work
and me time galore,

looks yummy, I made herb and spinach fritters a few days ago, that went down like a charm, I'm sure yours were a bit better though, they definitely look it!
